Rabbit Cassoulet
Ingredients:
1 rabbit, boiled until tender, deboned and chopped
1 tablespoon of canola oil or canola oil spray
1 large Vidalia onion, chopped
1 red bell pepper, remove seeds and chop
1 green bell pepper, remove seeds and chop 2 cans great northern beans
2 cans diced tomatoes, undrained
1 teaspoon minced garlic
1 teaspoon chile powder
Salt and pepper to taste
Directions:
Prepare your ingredients.
Place large pot over medium heat. Heat oil or spray with canola oil spray. Add onions and peppers and saute briefly.
Add tomatoes, beans and seasonings. Mix well. Add rabbit. Cover and simmer about 15 minutes to heat thoroughly and blend flavors.
Serves: 2-4
Serve with a dollop of sour cream and Mexican cornbread.
