I have never been a fan of sugary cereals. However, for busy families, a “healthy” breakfast is often out of reach. My own family loves a big, Southern “breakfast” for Saturday Brunch or for supper on any night.
The first breakfast burrito that I tasted was from Sonic. I was at the hospital with my mom, who had suffered a stroke, and my brother brought 2 burritos to me. They were delicious and I was hooked!
Naturally, I had to come up with a recipe. In the beginning, I used fresh peppers and onions. Since I discovered frozen peppers and onions, I find them much more convenient. I buy them as “stir-fry peppers and onions” or “fahita peppers and onions mix”. Both are a lovely mixture of sliced red, yellow, and green bell peppers and onions. You should be able to find one or the other in your favorite store. Read your labels and don’t buy the seasoned type.

For this recipe you will need:
Ø 1 package ground sausage (hot or mild, as desired) scrambled and browned
Ø 1 dozen eggs
Ø 1 cup shredded cheese (we like Cheddar and Mozzarella mixed)
Ø 1 to 2 cups mixed bell peppers and onions, chopped
Ø salt and pepper to taste
Ø large or x-large soft flour tortillas
What you do:
1. Assemble your ingredients.
2. Measure out your cheese. (Shred if not pre-shredded.) Set aside.
3. Prepare your peppers. You may add them directly to your sausage scramble or defrost them for a few seconds in your microwave, or by running hot water over them, and chopping them on your cutting board.
4. Beat your eggs and set aside.
5. Scramble your sausage. (I like to start my sausage in a little water to keep it from sticking in the beginning.) Add peppers. When sausage is brown and crumbly, drain fat.
6. Open package of tortillas and place entire package in microwave for 1 ½ to 2 minutes. While these are heating
7. Beat eggs a final time and pour over sausage and peppers. Don’t stir at this point.
8. Add cheese by sprinkling evenly around pan. Scramble together, stirring constantly until eggs are softly done. It is important not to cook eggs to a dry stage as they continue to cook after they are removed from heat. Too many cooks make this mistake when cooking eggs.
9. Remove tortillas from microwave. Remove tortillas from package and place entire stack on large plate. Be careful! They will be hot.
10. Place a large spoonful on each tortilla.
11. Wrap and Enjoy.
Additional Notes:
1. These are great served with Salsa.
2. Replace Sausage with Steak or Bacon.
3. Try adding sliced olives for a healthy delicious difference.
4. They travel well in the lunch box.
Wrapping a Burrito:
1. Place your filling in the center of the heated tortilla.
2. Fold over the left and right side.
3. Fold the back of the tortilla, the side facing you, over the filling.
4. Tuck it almost underneath the far side of the filling and scoop it tightly backwards, toward you.
5. Roll up.

Freezing Burritos:
1. Cool to room temperature. (This is important to keep moisture and frost from your burrito.)
2. Place in freezer bags.
3. Press extra air out, seal and freeze. (Simple)

To Cook Frozen Burrito:
1. Thaw. The easiest way is to thaw overnight. However, this is not always feasible. You may wrap in a paper towel and thaw in microwave for 1 minute.
2. Wrap in paper towel and place on microwave-safe plate. Heat in microwave. Heat 1 Burrito for 1 to 1 minute 30 seconds. Heat 2 Burritos for 2 minutes to 2 minutes 30 seconds. (note: if you need to adjust time for your microwave, test in 30 second increments. You may also cut the thawed burrito in half to heat center more thoroughly.)
