When I first when on the Keto diet, I approached the local health department. They held a weekly Keto Diet class. Unfortunately, I was not allowed to participate, because I am a heart patient, and this ruled me out for safety reasons. However, they supplied me with a great deal of printed material. The basic Keto diet became my first tool into changing my life.
I was led to an app for my phone called Carb Manager. It is fantastic for keeping count of your carbs, fat, protein, calories and other macros. There is a free version as well as an upgrade, which has fantastic recipes. I recommend this app to everyone on the Keto diet. Please note I do NOT receive compensation. When my friend discovered that I was on Keto, she brought cream cheese, 2 eggs, 1/3 cup shredded mozzarella cheese, and a seasoning called Everything Bagel.
In my home, she mixed the mozzarella cheese and eggs, spooned 2 mounds of the mixture in a pan, and sprinkled with the seasoning. I was skeptical. Her bagels puffed up beautifully. When they were done, she put a tablespoon of cream cheese on each and gave me one to taste. It was delicious! So easy.

I have a donut pan which I thought would be perfect to make the bagels in a large batch. Afterall, bagels usually have a whole in the middle. It worked well. However, spreading cream cheese was difficult. Then, I decided to use a pan I found at a thrift store. No middle hole to deal with. The bagels puff up to a golden-brown perfection. Using 6 eggs and 1 cup of finely shredded mozzarella and provolone cheese gives me 12 bagels. Enough for 6 days. I keep in an airtight container in my fridge. Using 2 for a meal, I place a tablespoon of cream cheese on each and heat in the microwave for 30 seconds. | 2 bagels =2 carbs 2 tablespoons cream cheese =2 carbs Total net carbs-4, protein-17, fat-22, calories 274 |
These bagels are great with Keto tomato soup. I have also spread sugar free blackberry jelly on them as a sweet treat.
